1. Western Method (cup or standard teapot)
Ideal for everyday brewing and for those who value simplicity.
Amount: 10 g per 1 litre
Water temperature: 100 °C
Infusion time: 2 minutes
Infusions: Can be re-infused 2 to 3 times, slightly increasing the time with each infusion.
2. Traditional Chinese Method (Gong Fu Cha)
A refined ritual that reveals the tea’s full complexity.
Tools: gaiwan (lid, bowl and saucer) or a small Yixing clay teapot
Amount: 5–8 g for 100–120 ml of water (approx. ½ to 1 “cushion”, depending on size)
Water temperature: 95–100 °C
First infusion: quick rinse (3–5 seconds) — discard this water
Next infusions: 5 to 10 seconds for the first, then increase gradually
Re-infusions: up to 6 to 8 or more, with subtle nuances in each extraction
