What is Yerba Mate?

Mate is a traditional infusion made from the South American plant Ilex paraguariensis, rich in antioxidants and essential nutrients. Known for its natural energizing effect, it contains over 190 bioactive compounds, including vitamins, minerals, and caffeine, promoting well-being and vitality.

Mate consumption varies by region:
✔ In Argentina, Uruguay, and Paraguay, it is simply called Mate and is typically consumed hot and shared in groups.
✔ In Brazil, the hot infusion is called Chimarrão, while the cold version, ideal for warm days, is known as Tererê.

Fun Fact:

In the 17th century, yerba mate was banned by Jesuit missionaries, leading to a drastic decline in indigenous production. Today, it is one of the most popular beverages in South America and is gaining more fans across Europe!

How to Prepare

Water temperature: 100°C
Recommended quantity: 1 teaspoon (≈ 2 g per cup)

Hot Mate or Chimarrão Preparation:
1. Heat water to the recommended temperature.
2. Fill half of the Cuia (gourd) with mate. Cover the opening with your hand and gently tilt it to distribute the herb.
3. Insert the Bombilla into an empty space.
4. Add a little cold water first, then fill the Cuia with hot water. Do not stir.
5. Drink directly through the Bombilla and enjoy!

Tip: Avoid boiling water to prevent excessive bitterness.

Storage: Keep in a cool, dry place, away from direct light.

Toasted Yerba Mate Infusion

Predominant Flavour: Bitter and roasted

Ingredients:

  • 1 tablespoon of Toasted Yerba Mate (5g)
  • 1 teaspoon of Lemon Peel (1g)
  • 1 teaspoon of Liquorice Root (1g)

Preparation:

  1. Simmer the mate in 300 ml of water for 7 minutes.
  2. Remove from heat, add lemon peel and liquorice.
  3. Cover and steep for 5 minutes.
  4. Strain and serve.

Flavour Balance: The strong toasted flavour of yerba mate is lifted by citrus brightness and balanced by liquorice sweetness, creating a smooth, energising infusion.
