Water Temperature: 90-100°C

Infusion with Barberry Bark (Berberis vulgaris L.)

Predominant Flavour: Intensely bitter with earthy and astringent notes

Ingredients:

  • 1 teaspoon Barberry Bark (2g)
  • 1 teaspoon Elderflower (1g)
  • 1 teaspoon Licorice Root (1g)
  • 1/2 teaspoon Lemon Peel (0.5g)

Preparation:

  1. Place the Barberry Bark in 250ml of cold water.
  2. Bring to a boil and simmer for 6 minutes.
  3. Remove from heat and add Elderflower, Licorice Root, and Lemon Peel.
  4. Cover and let steep for 7 minutes.
  5. Strain and serve.

Flavour Balance: The strong bitterness of Barberry Bark is mellowed by the natural sweetness of Licorice Root and the floral notes of Elderflower. The Lemon Peel adds a citrus brightness that cuts through the astringency, creating a balanced infusion that aligns with traditional British herbal brewing methods.
