Olive – The olive tree is a mythical tree of the Oleaceae family of slow growth, predominant in Portugal. This tree is known for its religious symbolism and the fact that it has survived for several hundred years. According to historical records, the famous “Olive of Mouchão” is considered the oldest existing in Portugal at about 3350 years. This olive tree has 3 meters in height, and it's located in Cascalhos (Mouriscas, Abrantes). This tree has deep roots that can reach 6 meters, facilitating the absorption of nutrients present in the soil. Olive leaves are pointed and quite resistant to weather changes.

Regarding medicinal properties, olive leaves can promote good digestion and venous relaxation. They may also contribute to the treatment of gastritis and ulcers, even as the reduction of blood glucose.

Lemon – Lemon is a citrus fruit with an acidic flavour that comes from the lemon tree, a tree native to India and China. Its expansion is believed to have started more than 2500 years ago in Northeast India. Until the 10th century, the cultivation of lemon trees was restricted and only produced for ornamental purposes. From the 11th century onwards, the Arabs were responsible for its diffusion throughout Europe and Africa. It will be in the 15th century that the lemon takes on its most diverse functions in medicine, cooking and cleaning.

This fruit contains a high quantity of fibre and vitamin C, making it a potent antioxidant. Due to its vitamin component, lemon can contribute to the strengthening of the immune system, good digestion and regulation of the intestinal flora. It may contribute to the reduction of appetite, treatment of constipation and collagen production.

Infusion time: 5 to 7 minutes.

Recommended quantity: two teaspoon per person. Approximately 4grs/cup.

Suggestion on how to prepare your cold tea: add 2 tablespoons to 1.5L of boiled water and place in the fridge. If you want to add sugar or sweetener to your fresh tisane, you should do so while it is hot. A good natural option for sweetening is stevia. Just 1 dessert spoon. Preferably, do it before reaching the 3 minutes of infusion so that your tisane doesn't get too sweet. This is how you get a wonderful ICE TEA without any added sugars or artificial additives.
