At the time, tea was a rare medicinal drink, <\/span><b>only consumed by emperors and members of the court<\/b><span style=\"font-weight: 400;\">. It wasn&#8217;t until almost a millennium later, in the <\/span><b>Tang Dynasty<\/b><span style=\"font-weight: 400;\"> (618-907 AD), that yellow tea became popular among the Chinese people.<\/span><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><span style=\"font-weight: 400;\">Like other pure teas, yellow tea comes from the <\/span><i><span style=\"font-weight: 400;\">Camellia sinensis<\/span><\/i><span style=\"font-weight: 400;\"> plant. They can take between a few hours and several days to be ready, depending on the weather conditions and the ambient temperature, and the process can be repeated<\/span><b> up to three times <\/b><span style=\"font-weight: 400;\">until they are perfect.<\/span><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><span style=\"font-weight: 400;\">It differs from other pure teas due to several other factors, namely:<\/span><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><b>The oxidation process<\/b><\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\"><span style=\"font-weight: 400;\">The oxidisation process of yellow tea is a<\/span><b> complex process <\/b><span style=\"font-weight: 400;\">involving a series of chemical reactions between the enzymes in the leaves and oxygen. It begins as soon as the leaves are picked, rolled and crushed. The leaves are then exposed to oxygen and the oxidisation process begins.<\/span><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><b>The level of antioxidants<\/b><\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\"><span style=\"font-weight: 400;\">The antioxidant content of yellow tea helps <\/span><b>protect the body against damage <\/b><span style=\"font-weight: 400;\">caused by free radicals. Free radicals are unstable molecules that can damage cells and lead to the development of diseases such as cancer and Alzheimer&#8217;s.<\/span><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><b>The presence of polyphenols<\/b><\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\"><span style=\"font-weight: 400;\">Polyphenols have <\/span><b>anti-inflammatory and antibacterial<\/b><span style=\"font-weight: 400;\"> properties, which help reduce the risk of chronic diseases, diabetes, obesity and cardiovascular disease.<\/span><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><b>L-Theanine<\/b><\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\"><span style=\"font-weight: 400;\">Normally associated with<\/span> <span style=\"font-weight: 400;\">green tea<\/span><span style=\"font-weight: 400;\">, L-Theanine is also present in yellow tea. L-Theanine is an amino acid with <\/span><b>relaxing effects<\/b><span style=\"font-weight: 400;\"> that acts on psychological and emotional health.<\/span><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><span style=\"font-weight: 400;\">There are also three varieties of yellow tea, which differ in the type of leaves used and where they are grown:<\/span><b> Jun Shan Yin Zhen, Meng Ding Huang Ya <\/b><span style=\"font-weight: 400;\">and <\/span><b>Mo Ga Huang Ya.<\/b><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><span style=\"font-weight: 400;\">The<\/span><b> Jun Shan Yin Zhen<\/b><span style=\"font-weight: 400;\"> variety is grown on the island of Jun Shan, in Hunan province, and is the best known variety.
